Lydia Shire’s Skirt Steak With Japanese Perfection Sauce
Serves 2
Ingredients
9 ounces skirt steak (the thick end)
Salt
Pepper
Grapeseed oil
Japanese Perfection Sauce (recipe follows)
Directions
Preheat oven to 300°F.
Pat steak dry, then generously salt and pepper both sides. Sear in a cast-iron pan in grapeseed oil on each side.
Place skirt steak on a cake rack or directly on the oven rack with a cookie sheet below to catch the drippings. Roast about 10 minutes.
Rest for 5 to 10 minutes. Drizzle some sauce over the top of the steak to taste, and serve more sauce on the side.
Japanese Perfection Sauce
Ingredients
¼ cup low-sodium soy sauce
1 tablespoon wasabi powder
1 tablespoon water
8 tablespoons unsalted butter, softened
Directions
Heat soy sauce, wasabi powder and water in a small saucepan. When warmed, whisk in butter.
