Mr. Beef’s Giardiniera
Makes about 5 cups
Ingredients
2 cups sliced celery
1 cup diced carrots
1 cup chopped sport peppers
Black pepper to taste
Crushed red pepper to taste
Salt to taste
Oil (vegetable or canola)
Directions
Mix veggies and spices together in a bowl, then transfer to a jar or similar storage container and cover with oil. Serve atop Italian beef sandwiches. Do not refrigerate. Use within five days.
