Collards With Smoked Turkey Wings

Serves 6

Cooking time: 1¾ hours

Ingredients

Olive oil

½ yellow onion, diced

3 garlic cloves, diced

3 cups chicken broth

1 teaspoon crushed red pepper flakes

4 smoked turkey wings (about 3 pounds total)

1 bunch collard greens, washed

Kosher salt

Freshly ground black pepper

Hot sauce, to taste

Directions

In a large pot, heat up enough olive oil to just coat the bottom of the pan over medium heat. Add the yellow onion and garlic and cook, stirring, until they’re nice and soft, 5 to 8 minutes.

Pour in that chicken broth and add the red pepper flakes and turkey wings. Bring it to a boil, then reduce the heat. Cover and let it simmer for about 20 minutes. This step is key for infusing the broth with all that smoky turkey flavor.

Finally, it’s time for the collard greens! Add them to the pot and give everything a good stir. Put the cover back on and simmer for 50 minutes or until the greens are tender to your liking.

Once the greens are cooked through, taste your creation and season with salt and pepper. A few drops of hot sauce are also a welcome addition for those who like a little kick! Serve to your favorite friends.
