Key takeaways
- Greek yogurt provides protein and calcium that support healthy eating as we age.
- Fresh berries and a touch of honey create a naturally sweet frozen filling.
- Graham crackers and frozen berry yogurt make a lighter alternative to ice cream sandwiches.
Summary
Frozen yogurt sandwiches offer a simple way to enjoy a healthier dessert while adding protein and calcium to your diet. Chef David Kamen uses plain nonfat Greek yogurt, strawberries and raspberries to create a frozen treat that mimics a traditional ice cream sandwich.
The recipe starts by blending berries with Greek yogurt and an optional drizzle of honey, then freezing the mixture overnight. Once frozen, the berry yogurt is cut into squares and sandwiched between graham crackers for a refreshing summer treat that is lighter than a regular ice cream sandwich.

[0:00] Greek yogurt is a staple of healthy eating, especially when we get a little bit older.
[0:03] It’s very, very high in calcium.
[0:04] It’s very high in protein.
[0:07] And today we’re actually gonna make a Greek yogurt mock ice cream sandwich.
[0:12] So we’re gonna start off with some fruit, strawberries, raspberries as well.
[0:17] You can really use any fruit that you want.
[0:19] I’m gonna start to blend these.
[0:23] Depending on how ripe and how sweet your fruit is, you can always go ahead and add a little bit of honey.
[0:29] Just a nice little swirl.
[0:30] And then we’re gonna add our yogurt.
[0:32] Plain, nonfat Greek yogurt.
[0:34] We’ll go ahead and light this up and let it puree until it’s nice and smooth.
[0:41] It’s always a good idea to taste it before you freeze it.
[0:45] That tastes really good to me.
[0:47] Pour that right into the pan.
[0:48] The parchment paper will help us get it out easier once it’s frozen.
[0:53] And into the freezer we go.
[0:55] So our frozen yogurt with, uh, berry puree has been in the freezer overnight.
[0:59] I took it out of the mold, squared it off and got rid of all the ratty edges.
[1:03] I’ve got my knife sitting in some warm water over here, and that’ll just help cut through it.
[1:07] And we’re just gonna go ahead and cut that.
[1:09] And we got our graham crackers all laid out over here. Just kind of broke them in half.
[1:13] Take our ice cream. Set these right on top of our graham crackers like this.
[1:18] Put the top on.
[1:19] And there’s a really good nice summer treat.
[1:21] Much healthier than a regular ice cream sandwich.
[1:26] That’s good.
