Try tofu roll-ups. They're a favorite of AARP health and fitness ambassador Martina Navratilova, and she shows you how to make them in this video. To prep them yourself, you'll need:
10 whole-wheat lasagna noodles, cooked according to package directions
1 lb. soft tofu
2 egg whites
1/4 cup, plus 3 tbsp., fat-free parmesan cheese
1 cup fancy shredded fat-free mozzarella cheese
1 tbsp. sweet basil
2 tsp. ground oregano
1 tsp. garlic salt
1/4 tsp. ground red pepper
1/4 tsp. black pepper
1 26-3/4 oz. can of light spaghetti sauce
Blend the tofu, egg whites, parmesan cheese, mozzarella cheese, and spices in a bowl to form a paste. Spread the lasagna noodles on aluminum foil. Spread the tofu mixture on a noodle, up to the edge. Repeat with other noodles. Roll up each noodle, and cut each roll in half.
Fill a large rectangular baking dish with spaghetti sauce. Place the rolls in the dish. Sprinkle with the extra parmesan cheese. Cover and bake in a 350° oven for 45 minutes.
