Harvest Bircher Muesli

BUSY MORNINGS don’t have to mean skipping a wholesome breakfast. Executive Sous Chef Brandon Griffin of Miraval Austin Resort & Spa shares four make-ahead recipes featuring comforting fall flavors and nourishing ingredients.

Night-before prep is easy. Per serving, combine all listed proteins, carbs (which include fiber), sweeteners and flavorings, and refrigerate overnight. In the morning, add toppings (including healthy fat sources such as nuts and seeds) and enjoy.

HARVEST BIRCHER MUESLI

Proteins: ½ cup Greek or nondairy yogurt, ¼ cup almond or oat milk

Carbs: ½ cup rolled oats, ¼ cup grated apple, 1 tablespoon chia seeds, 1 tablespoon ground flaxseeds

Sweetener: 2 teaspoons honey or maple syrup

Flavorings: ¼ teaspoon grated ginger, ½ teaspoon vanilla extract, ⅛ teaspoon cardamom, ½ teaspoon cinnamon

PUMPKIN OVERNIGHT OATS

Proteins: ¼ cup Greek or nondairy yogurt, ½ cup almond or oat milk

Carbs: ½ cup rolled oats, ⅓ cup pumpkin puree, ¼ cup cooked quinoa, 1 tablespoon chia seeds

Sweetener: 2 teaspoons honey or maple syrup

Flavorings: ½ teaspoon cinnamon, ¼ teaspoon ginger, ⅛ teaspoon cardamom

APPLE-PEAR CHIA PUDDING

Protein: ¾ cup almond milk

Carbs: 3 tablespoons chia seeds, ¼ cup grated apple, ¼ cup diced pear

Sweetener: none

Flavorings: ½ teaspoon vanilla extract, ½ teaspoon cinnamon, ½ teaspoon grated ginger

GOLDEN TURMERIC QUINOA BOWL

Protein: ⅓ cup coconut milk

Carbs: ¾ cup cooked quinoa

Sweetener: 2 teaspoons maple syrup

Flavorings: ½ teaspoon vanilla extract, ½ teaspoon turmeric, ¼ teaspoon ginger, ¼ teaspoon cinnamon


Make-ahead tip: Keep crunchy toppings like granola, nuts, toasted seeds and coconut in airtight containers. Add juicy fruit toppings just before eating, or layer them on top of the grain or yogurt base, rather than mixing them in overnight, to preserve texture.
