Meatballs in Rustic Tomato Sauce

Meatballs
Serves 4 (22 meatballs)
INGREDIENTS
- 2 pounds lean ground turkey
- 3 garlic cloves, finely chopped
- ¼ teaspoon ground nutmeg
- 2 tablespoons finely chopped parsley
- ½ teaspoon dried oregano
- ½ teaspoon cumin
- ½ teaspoon sweet paprika
- 1 tablespoon small capers
- 3 tablespoons bread crumbs
- Salt and pepper to taste
- Flour for coating
- 3 tablespoons vegetable oil
DIRECTIONS
1. Mix all ingredients, except flour and oil, in a large bowl. Season well.
2. Shape into meatballs of approximately 1½ inches in diameter. Coat meatballs lightly with flour.
3. Pour oil into a large skillet. Add meatballs and brown on all sides.
4. Remove from skillet and set aside.
Rustic tomato sauce
INGREDIENTS
- 2 tablespoons olive oil
- ½ medium Spanish onion, diced
- 4 garlic cloves, finally chopped
- 1 green onion, finely chopped
- 1 red pepper, cored, seeded and cubed
- ½ teaspoon dried oregano
- 1 28-ounces can diced tomatoes, with juice
- ¾ cups chicken broth
- ¼ teaspoon red pepper flakes
- Salt and pepper to taste
DIRECTIONS
1. Pour olive oil into skillet used to brown the meatballs.
2. Add diced Spanish onion and sauté 3 to 4 minutes until translucent. Add garlic, green onion, red pepper, oregano, tomatoes, pepper flakes, chicken broth, salt and pepper.
3. Cover and cook over medium-low heat for approximately 8 to 10 minutes, until thickened.
4. Add meatballs to sauce. Cover and cook over medium-low heat for 15 minutes.
