Your mother was right — carrots truly are good for your eyesight. Carrots are an excellent source of beta-carotene and vitamin A, which has been linked to the prevention of cataracts, as well as eye, throat and sinus infections. Additionally, carrots are rich in vitamins B3, C and E; calcium; phosphorus; potassium; fiber; and folic acid.

Affordable, nutritious and available year-round, carrots are delicious raw or roasted, and a versatile ingredient in a range of dishes from salads to stews. Much of the nutrition is close to the surface, so it is advisable not to peel carrots, but rather simply scrub them well before eating or recipe preparation.

If you buy carrots with the tops, cut them off before storing. The carrots will keep well refrigerated but the greens will spoil and affect the quality of the entire stalk. Do not store them near apples or pears, which emit a gas that will turn carrots bitter. The milled and bagged "baby carrots" in grocery stores everywhere are a very convenient way to have this healthy root vegetable on hand for snacking and cooking.
