I just found this group and have found some fun ideas for cooking for one. After four years of eating frozen Stouffer-type meals, I've suddenly become re-interested in cooking for myself. My salvation lately has been my George Forman little grill, as I found I can buy a package of skinny pork chops (freezing what I don't need yet), or a single lamb chop, slice of ham, etc. and have a quick start for my meal.
I compliment my quickie meal with 1/2 bag of flavored instant potatoes done in the microwave and a vegee of my choice. Of course I need something sweet for desert, and sometimes it's a couple of Vienna Fingers cookies.
Maybe it's the cold weather setting in, but I am surprising myself how I am enjoying this. What I especially notice is that I'm not hungry any more after supper, as I always was after eating the frozen box meals. I don't seem to have the desire to snack all night long. Thanks to George I can still have a satisfying main meal in less than 15 minutes.
I, too have a George Foreman grill. I enjoy cooking on it. I have not adjusted to cooking for myself, alone. I have always been cooking for family members so I still cook big meals. However I might now cook a large pot of spaghetti and eat on it for a few days, minus the delicious garlic bread and salad. So I do not eat full meals, anymore. Your idea was great. I love makng 'smoothies,' though from all kinds of fruit. They satisfy me and are nutritious. I can taste the meal you mentioned, especially the pork chops.
