Trying to spend more time with freezer cooking. Cook once..Eat Twice. Any more recipies anyone cares to share?
I'm not a veggie but don't eat much red meat. I buy a lot of boneless/skinless chicken meat.
I enjoy high protein..beans, etc.
Oven cooking is fine. It's not 100+ right now. Crockpot and microwave too but I don't fry.
Prefer hot (heated) dishes (not spicy). Mild spicy is ok...I like taste my food.
Just basic things as I'm not into exotic.
OK, I am exotic just not the foods I eat. I'm retired and can be anything I want. : )
BEANS, BEANS, BEANS
2 T. olive oil
2-3 zucchini (chopped)
1 red pepper (diced)
1 Lg. Onion (diced)
1 green chili pepper (diced)
1 Tbs. chopped garlic
1/2 t. chili pepper
1/2 t. cayenne pepper
1 t. sea salt
1 Lg. can black beans
1 Sm. can white beans
1 Sm. can chickpeas
1 Sm. can kidney beans
1 large can plain diced or crushed tomatoes
Sautée all raw veggies in olive oil.
Add all spices
Cook for 5 minutes.
Drain all liquid from bean cans
Add tomatoes and all beans.
I let it all simmer for 2-3 hours.
It keeps in the refrigerator very nicely.
It freezes well, also.
Servings: 4-6 depending on your appetite
