I have a bachelor brother that I share my recipes with...He insist any recipes I give him be simple and less than 6 ingredients...He loved this one...we make it with chicken breast or on occasion with a pound of hamburger meat instead. Great with taco chips and a shredded salad with a sliced tomato and avocado. Before you add the cream cheese you can divide into fourths and package it to freeze for later...Then add the cream cheese once you reheat each portion.
Crockpot Chicken w/ Black Beans and Cream Cheese
4 boneless chicken breasts
1 (15.5 ounces) can black beans
1 (15 ounces) can corn (Mexicorn is best)
1 (15 ounces) jar salsa, we like chunky Pace
1 (8 ounces) package cream cheese
Take 4 boneless chicken breasts put into crockpot.
Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained
Keep in crockpot on high for about 4-5 hours or until chicken is cooked.
Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
