Keep a bag of frozen, shelled, pre-cooked shrimp on hand or buy them in a "Shrimp ring". Just take out about six, thaw them and toss them with some butter, garlic and lemon juice, warm in the oven for scampi.
Or put them on top of a big bowl of greens, tomatoes, cucumber and avocado, and dress with Green Goddess dressing.
Sauté them briefly with bell pepper strips and some onions and serve in a flour tortilla for shrimp fajitas.
Stir fries are good, too. Just select the appropriate amount of your favorite veggies, sauté quickly, add some soy sauce or Szechwan sauce, and serve over rice.
