I cook a potful of whole grain rice and of whole slow cooking Irish or Scot oatmeal. Then I spray a muffin tin with cooking spray and make myself approximately 1/2 cup portions. I freeze them in the muffin tin, then pop them out and put in a large freezer bag. Then I can pull out just what I want and defrost. Often on the oatmeal, I add whatever dried or frozen or fresh fruit appeal to me and sometimes I freeze them in sandwich bags squeezing out the air and after frozen, transfer all the little bags to a large freezer bag.
What a super idea!
You know, a muffin tin is the ideal size for a lot of this sort of cook and freeze food.
