2 T. olive oil
1/2 cup diced onion
1/4 cup green pepper, diced
2 cloves garlic, minced
15.5 can black beans, undrained
3/4 cup water
1 tsp. oregano
1 T. cider vinegar
2 cups cooked rice
Heat oil in medium saucepan over medium heat. Add onion, pepper and garlic. Cook until tender, about 8-10 minutes. Stir in beans, water, oregano and cider vinegar. Bring to a boil, then reduce heat and simmer 10 minutes. Serve hot over rice. Garnish with salsa and sour cream. *Makes 4 servings.
*Variations: Brown rice adds a nutty flavor and crunchy texture. you may cook the rice yourself, or use microwave pouches from grocery store shelf or freezer section. Diced tomatoes, chopped green onions and shredded cheese are delicious sprinkled on top.
