Jake Walkers Black Rice Pudding (from "Edible South Shore" free magazine)
1 cp. black rice; 1 cp. fresh or frozen cranberries, 2 tbl. sugar, 1/4 cp. brown sugar, 1 1/2 tbl. honey, 1/2 tsp. vanilla extract, pinch ground cloves, 1 cp. cream warmed.
Place rice in med. saucepan with two cps. cold water. Bring to a simmer over med. heat. reduce heat to low and cook covered about 30 min. keep warm.
Meanwhile in another saucepan combine cranberries, sugar, & 3 tbl. of water and cook over med. heat until cranberries pop (you may want to cover the pan to prevent mess) and form a sauce. Keep warm over low heat. Stir in brown sugar, honey, vanilla and cloves into rice, mixing thoroughly. Divide into serving bowls and top with dollops of cranbery sauce and warm cream to taste. Serves 6

Well, this is timely, I was just looking at my rice pudding recipe and it's pretty much like this only it calls for white rice. Crans or raisins. Might have to buy some black rice and cook this instead. Thanks, Zil

I imagine it looks festive looking with the cranberries and the blk. rice..I will also have to pick up some black rice ....it sounded interesting to me too...
