This is a favorite in my family, that my Mother always made at Thanksgiving. Last year I made it with 14 pounds of sweet potatoes.
5 pounds sweet potatoes
2 apples, peeled and grated
1/2 cup brown sugar
Juice of 1 orange and zest
Juice of 1/2 lemon and zest
1 tsp. cinnamon
1/2 tsp. salt
Boil sweet potatoes in skins until tender. Let cool enough to handle. Peel and mash. Add other ingredients and combine until smooth. Grease
This sounds delicious and I will have to give it a try.
Here is my favorite that I actually make it several times a year and it always disappears.
Sweet Pototato Casserole:
3 cups of sweet potato
1 cup of splenda
1/2 cup of evaporated milk
1 stick of butter or marjorine
Cook sweet potatoes until soft, drain then mash with splenda, butter, evap. milk. Spread into 9x13 glass dish (grease first).
3/4 cups brown sugar
1/4 cup of flour
4 tbsp. of butter (softened)
1/2 cup of pecans (or other nut)
Mix these 4 ingredients until blended then spread on top of the sweet potatoes. Cover with tin foil.
Bake for 40 minutes at 350 degrees. Take off tin foil and bake for 10 more minutes or until topping is lightly browned.
