This is the best cake type of fruit cake I have ever eaten. It is a "cake" not a gummy fruit mixture!
2 1/2 cups sifted flour 1 teaspoon baking soda
2 eggs, lightly beaten 1 jar (28 oz ready to use noe such mincemeat
15 oz can condensed milk(ie. eagle brand) 1 cup walnuts (or pecans) chopped
2 cups (1 lb ) mixed candied fruit
Butter a 9 inch tube pan and line with wax paper and butter again.
Sift flour and baking soda; combine eggs, mincemeat, eagle brand milk, fruit and nuts. Fold in dry ingredients. pour into pan. Bake at 300 degrees for 2 hours, or until center springs back and tops is golden. Cool and Turn out on plate and remove wax paper.
(I don’t use the wax paper, cause I use a non-stick bundt pan, but do grease, or spray with "flour" spray.
