I have made a lemon cake with a filling made of Lemon juice, zest, sour cream, and powdered sugar. My friend makes a meringue and adds lemon juice and zest while whipping the egg whites. She uses this as a topping, not a filling. Hope this helps.
That sounds awfully good--how do you actually "fill" the cake?
