Gingered Sweet Potatoes
4 Tablespoons Butter (or margarine) 4 Tablespoons Olive oil
1/2 cup packed brown sugar 3 - 4 tablespoons Honey
2 Teaspoons cinnamon 1/2 teaspoon salt
1 Teaspoon ground Ginger 1/2 teaspoon ground black pepper
2 to 3 Large sweet potatoes, peeled and cut into wedges.
In Large skillet, heat butter & oil over medium heat. Stir in rest of ingredients, except potatoes until blended well. Add in potatoes and stir to coat , cover and cook over low heat 30 minutes, or until potatoes are tender, stirring occasionally.
I don't really measure any of this anymore. I use enough potatoes to fill the skillet, or sometimes an iron pot, when for the whole family.
If there doesn't seem to be enough "juice" add a little more honey.
