ingredients: 300g/11oz mashed potatoes
200g/7oz can tuna in soya oil, drained
115g/4oz canned or frozen sweetcorn
30ml/2tablespoon chopped parsley
50g/2oz fresh white or brown breadcrumbs
salt and ground black pepper
grilled baby plum tomatoes and salad potatoes, to serve
preheat the grill,
1 place the mash potatoes in a large bowl and stir in the tuna fish,sweet corn and chopped parsley
2 season the mixture to taste with salt and pepper and mix together thoroughly, then shape into eight patty shapes.
3 lightly coat the fish cakes in the breadcrumbs, pressing to adhere, then place on a baking sheet
4 cook the fish cakes under the hot grill until crisp and golden brown on both sides, turning once. serve hot with grilled baby plum tomatoes and small salad potatoes.
i have made these using tinned salmon or smoked mackeral in place of the tuna.
