I was a little dubious when I first came across this recipe. It's another one from my grandmother. She made a note on the card that she had gotten it from a relative while in Corpus Christi, Texas in 1933. Apparently it's a version of the old fashioned soda cracker pie.
I wasn't sure how it would turn out, but thought I'd give it a try. Boy, am I glad I did. The exterior is crisp like a meringue, but it's chewy inside with a sweet, nutty flavor.
Serve it with whipped cream and fresh fruit for an unusual and delightful dessert.
Servings: 6 Ingredients:
1 cup crushed graham crackers
1 cup chopped nuts (I used pecans.)
1/4 teaspoon salt
4 egg whites
1 cup sugar
Fresh whipped cream to serve
Mix together the graham cracker crumbs, chopped nuts and salt.
Beat the egg whites, gradually adding the sugar, until thickened. It will have the consistency of marshmallow cream.
Fold the graham cracker mixture into the egg whites.
Pour into a 9-inch buttered pie pan.
Bake in a pre-heated 325 degree F oven for 35 minutes.
Allow to cool and serve topped with fresh whipped cream.
Thank you for this great recipe, I thought you might like to top the delicios pie with flavored whipped cream. Vanilla: 1 c. Heavy cream, 2 T. powdered sugar, 1 tsp. vanilla Put cream into a chilled bowl, and whip until thickened. (about 2 minutes) add powdered sugar and vanilla and whip into fluffy peaks. Cinnamon: Mix 1 tsp of cinnamon with 2 T. of powdered sugar and add to the thickened heavy cream before beating into puffy peaks. Chocolate: Mix one half c. powdered sugar with one quarter c of unsweetened cocoa onto a sheet of waxed paper. While whipping 2 cups of heavy cream, slowly add te sugar cocoa mixture. Whip to texture of shaving cream ( about 4 minutes ) You can use sugar substitute if necessary. I have also used peanut butter as a flavor, use your imagination, my daughter has used straw berry jam instead of powdered sugar.
