Costoletta di Maiale con fichi
2 Thick cut pork chops
1 TBSP Butter and EVO (extravirgin olive oil)
1 tsp Anise seeds
1 C Pearl onions,
6-8 Figs cut in half
¼ C Port
½ C Cream
Salt and pepper
1 Shallot, minced
Preheat the oven to 350°F. Wipe pork chops and moisten with olive oil and add anise seeds to each side pressing gently. Heat EVO and butter in a cast iron skillet over medium heat until fat begins to smoke. Add pork chops and brown on both sides. Add some port to the pan and reduce. Lower the heat and add minced shallots, figs and pearl onions. Add cream and cover. Place in the oven to braise for 20-30 min. Serve with buttered egg noodles.
Mille grazie for recipe....reminds me that figs are delicious with prosciutto (thinly sliced ribbon style) and a pink peppercorn vinaigrette. Have not made that in years, about time I prepare this again.
