ZIL, Sounds delicious but you print is very small even with my glasses, maybe you could send it again in larger letters for some of us who are pretty hard of seeing, thanks
|There's no shortage of zucchini this time of year. It seems like everyone has a few extra to give away. That's just fine with me because I love zucchini. It's so versatile it can be used to make everything from chocolate cake to this simple sauté. For the best texture and flavor use small to medium sized fruits.|
1 tablespoon olive oil
1 tablespoon butter
3 medium sized zucchini cut into 1/4-inch-thick rounds
salt and pepper
Sprinkle the zucchini slices with salt and pepper to taste.
Heat olive oil and butter in a 12-inch skillet over medium high heat.
Place the zucchini slices in the skillet so that they lay flat. To prevent overcrowding you may have to do two batches.
Sauté the zucchine without stirring until they are golden brown on the bottoms. Flip over and continue to cook until golden brown and tender. It should take about 5 minutes on each side.
