I worked for 6 years in the Marketing and Sales Department for a Rice Company based in Houston that produces, Mahatma, Carolina, Success-boil-in-bag rice and other private label brands. We had to attend blind taste testings on a weekly basis. One of the recipes that I really liked was a simple Rice Pudding. All you use is:
Left over plain boiled white rice
Melted Blue Bell Vanilla Ice Cream (I would either leave some out to melt in the fridge or nuke it on the defrost cycle- keep an eye on it so it doesn't cook)
Pineapple (can use white or regular raisins instead of pineapple)
A sprinkle of ground cinnamon
That's all there is to it. The vanilla ice cream made it so yummy. it's a quick recipe for a last minute dessert. Unfortunately, I don't have measurements. I always melted in the ice cream until it was creamy enough to suit my preference - the same with the fruit and cinnamon. It was always well received. it's particularly refreshing in the summer with the ice cream still on the cool side.
