Hi Blueslady! Not sure if this recipe is what you are looking for but here's the recipe for Porcupine Balls passed around my family for as long as I can remember. You know me...it's right up there in the easy category!
1 pkg Beef Rice-a-Roni
1 lb ground beef
Mix all. Shape in to small meatballs. Brown on all sides in skillet. Combine the contents of the beef seasoning packet with 2 1/2 cups of hot water. Pour over meatballs. Cover and simmer for 30 minutes. Thicken gravy if desired.
Thank you, that sounds about right, I'll give it a try and see if it looks and tastes the same as I remember. This must be a "Texan Thing", she was reared in Wolfe City, Texas near Greenville, and she had lots of easy but good dishes.
