This sounds wonderful and I will give you a favorite of mine that I got from my mother-in-law several years
ago. She was from a small village just outside of Paris, France and a wonderful cook. The first time I heard
of a potato omelet I thought it sounded awful but it is wonderful.
Dice 2-3 potatoes really small and saute in small amount of oil and butter until brown. Whisk 5-6 eggs with
a little milk and pour over potatoes. (make sure no excess oil) Use spatula or egg turner to maniulate egg
tilting pan to let uncooked eggs run under the cooked ones until solidified. Using a plate slide eggs cooked
side down on plate and flip uncooked side back in pan to finish cooking. Garnish with shredded cheese
and chives. (By the way use a rounded bottom frying pan to cook or you will have a hard time sliding omelet
out of pan. Cut in wedges and serve with toast and sliced fresh fruit
