Shaker Lemon Pie
4 lemons sliced thin, seeded
2½ C sugar
pie dough to line and cover a 9-inch pie plate
Preheat oven to 450°F. Toss sliced lemons with sugar and let stand for 8 hours.
Beat eggs and pour over lemons. Roll out half of the pie dough and line a pie plate. Pour lemon batter into the crust and roll out the top crust and cover the plate, crimping the edges. Bake for 15 min and then reduce the temperature to 350°F and bake for another 30 min.
Very interesting.............you wind up eating the lemons, peels & all, obviously.
Don't know where you're from, but the "druthers" & the stove sound very homey/countrified. LOVE it!
