8 oz. of fresh fish fillets ( haddock, scrod or other white fish), 2 med. carrots, very thinly sliced, 2 small onion or 3 scallions chpd., 2 stalks celery sliced, 1 med. potato, sliced very thin, 1 tbl. parsley minced or 3/4 dried , 1 tbl. margarine, dash of pepper,paprika, and lemon juice.
Wash the fish and pat dry with a paper towel; set aside. Arrange vegetables and parsley in a baking dish. Dot with margarine and cover and bake at 400o for 10 minutes. Add the fish to the baking dish; sprinkle lightly with pepper, lemon juice and paprika. Bake for another 8-10 minutes or until fish easily flakes with a fork. This makes 2 servings, each containing 6-7 grams of fat and 305 to 330 calories, depending on type of fish used. For more serving double or triple recipe.
