2 qts. chicken broth or beef broth, 1/2 cp. raw pearl barley, 2 lg. carrots, sliced or diced, 1/2 tsp. dried sage, 1 tbl. vegetable shortening, 1 onion chpd., 10 oz. mushrooms sliced, 2 cloves garlic , minced or crushed, salt and pepper to taste, 1/2 cp. chpd. parlsley...
Combine the broth, barley, carrots and sage in a pot. Bring to a quick boil; reduce heat and simmer slowly for 40 minutes. Meanwhile melt the shortening in a skillet over med. -low heat. Add the chpd. onion and cook until wilted. Turn up the heat to med.-high and add the mushrooms cook for 5 minutes. Add the garlic and cook 5 minutes more. Stir the mushroom mixture into the broth. Taste for seasoning and add the pepper and salt, if needed. Simmer partially covered 20 minutes longer. Stir in the parsley and serve. Serves 4 ..
