4 cps cooked rice, 6 tbl. oil, 2 eggs, 1/2 cp. small raw shrimp, 1/2 cp. green peas (froz. or fresh) 1 /2 cp. roast pork or cooked ham diced, 1 cp. fresh bean sprouts , 1/2 cp. scallions (chpd) 1 tbl. soy sauce.
Procedure: 1. Flake the rice so that the grains do not stick together; set aside.
2. Heat 2 tbl. oil in a wok, pour in the beaten eggs and stir fry quickly until eggs are in tiny pieces, remove from pan.
3. heat another 2 tbl. oil & stir fry shrimp and ham add green peas and fry about 1 minute. Add bean sprouts and fry for anothe half a minute. Remove from pan and set aside.
4. Heat another 2 tbl. of oil in same wok. Fry the scallions and cooked rice,mixing well. Add 1 tbl. soy sauce and mix again. Reduce heat and stir until rice is thoroughly heated...then add egg & shrimp mixture ..mixing well. Serve on a pretty platter.."Try It You'll Like It!
