Fancy corn bread
Collect all of the ingredients in a mixing bowl and stir until completely mixed.
2 boxes cornbread muffin mix
2 eggs (per recipe on muffin mix box)
raisins and walnuts to your needs and tastes
one can apple sauce (this adds liquid needed by the muffin recipe on the box)
1/4 cup instant dry milk (see recipe on the box again)
one teaspoon cinnamon (or to taste)
If you are not using a high-quality teflon-lined pan, then add one tablespoon vegetable oil to facilitate release from the pan after baking.
bake until done at 350 degrees. This a pretty dry mix, so either check on it frequently (first check in 20 minutes, every ten minutes thereafter) by sticking a tootpick into it to see about doneness or else be sure your kitchen smoke detector is working. If you want the baking process to last longer, then add some water (You might want to multitask, i.e., housekeeping, laundry, etc.)
