Hi Astraea, I am sure there are some valid findings with Dr Heber's research. As far as beige goes, there are nutrients in tofu yogurt and oatmeal. It is my understanding that there is one nutrient that is found only in oatmeal.
Balance seems to be the key. Fifteen years ago Dr Barry Sears began publishing his research and it was all about a balance of protein carbs and fat. It seems very reasonable to me but I still find it difficult to discipline myself. I am however going to try once again. He has a website and you may find books in the library that he has written.
My SELF knows that this is the answer for me if I could just get organized with it. Of course that means getting back with some exercise also. Callan Pinckney was my favorite with that.
You're right, and I was just being facetious, because there are many valid exceptions to the color "rule". Did I mention brown rice? I can't wait for the weather to get warmer, so it's nice to walk outside!
