The writer thinks applesauce and pureed pumpkin can substitute for oil. The recipe contains 1 1/2 cups shredded zucchini and 1/2 cup shredded carrots. It does havea whole cup of brown sugar though.

I've actually used applesauce in lieu of oil when making brownies (I know, brownies). They turned out pretty well, but were much more cakey than fudgy. Thanks for passing the recipe along!
