My dear friend who is a personal trainer/nutritionist/yoga instructor (she's a bit of an over-achiever...) gave me this recipe for homemade granola. It's so easy! Honestly, you can pretty much throw in the kitchen sink with this one - I've made different varieties with pistachios, cherries, and cranberries.
4 cups oats
1 cup wheat germ or bran
1 cup sunflower seeds
1 cup coconut
1 cup walnuts or pecans
1 cup almonds
1 tsp. cinnamon
1 tsp. vanilla
1 cup honey (try to use local honey - it helps with allergies!)
1/2 cup vegetable oil
Preheat oven to 300 degrees. Mix dry ingredients. Heat oil and honey to combine; let cool slightly and add vanilla; pour over dry ingredients and mix. Bake for one hour in ungreased pans, turning a few times. Let cool and mix in 1 cup dried fruit.
Sounds like a great combination; my only concern would be how long it would (or wouldn't) last in my house! (LOL)
