There are several sources around the internet that do address the tendency of lettuce to absorb harmful pollutants. This is just one example:
You can find many others if you do a Google search. It makes sense if you think about it. Lettuce and other greens do not have a stem where the pollutants might be sequestered...a sort of "last filter" before entering the "fruit" of the plant.
Lettuce and other greens absorb water almost directly into the myriad veins which are easily visible on the plant's leaves. The ground water may be heavily contaminated with the pollutants in the soil. It just pays to know if the garden plot is in an area which may have once been home to various chemicals or chemical waste. If there has been no attempt at reclamation, who knows what the plants will absorb?
