Libbyboi posted an interesting recipe for a "one pot" Sunday Supper in another thread. I haven't tried it yet, but I think I will soon. I will probably add one or two of my own ingredients, but keep it very simple and true to the original intent.
Does anyone else have simple "one pot" meal ideas to share? This is not for a crockpot recipe or "dump it all in" kind of thing...just a simple, 5 ingredients or less meal, that can be prepared in one pot or pan.
I frequently make angel hair pasta, then strain when it is "al dente." My sauces can be as simple as adding a small can of seasoned diced tomatoes, some canellini beans, rinsed, and a handful or two of chopped baby spinach leaves. I add freshly grated Parmesan cheese, sea salt and fresh ground black pepper to taste. Simple and easy and all done in one pot.
Another sauce is to beat two fresh eggs with a little cream or milk...depending on one's taste, add a good helping of freshly grated Parmesan cheese, then toss with the hot drained pasta in the pan after melting a couple of pats of butter or adding a small amount of olive oil to the pan. You can use a combination of butter & oil if you like. The addition of some crumbled bacon is good. Season with sea salt and freshly grated pepper to taste. Round it out with a simple green salad. Still one pot, simple and easy!
