Potatoes Italiano (serves 4-6)
4 lg. baking potatoes; 1 tbl. olive or vegetable oil; 1/4 cp. grated Parmesan cheese; 1 cp. shredded Mozzarella cheese; 3 med. tomatoes, slliced; 1 lg. onion, peeled and thinly sliced; 1/2tsp. Oregano; 1/2tsp. salt;1/8tsp.pepper; 2tbl. butter
Peel and slice potatoes in 1/4" slices. Oil a 9x13" casserole dish; Combine two cheeses, reserving some for topping. Arrange potatoes,tomatoes & onion slices in layers; sprinkle each layer with cheese & seasonings; Dot with butter and bake uncovered for 30 minutes in a 400o oven. Remove from oven and sprinkle with remaining cheese; bake for an additional 20 minutes..
Note: After cooking for the time stated I found the potatoes still not thoroughly cooked to my liking so I put a sheet of aluminum foil over and baked a little longer checking it for doneness..
