In Response to Shrimp Bake on Grill:
I just made this last night and it was so easy and quite tasty!
Shrimp, spinach, cilantro, lime, evoo, couscous, mango, tomoato, avocado, red onion, salt.
Turn or light the grill. Peel & deviene the shrimp, add 1 tbsp of Olive Oil and 1/4 cup of chopped cilantro and mix. Pour one cup of couscous into bowl - add 1/4 cup of water and fluff lightly with fork. While this is resting, chop 1 mango, 1 large tomato, 1 avocado, 1/4 cup of red onin, 1/4 cup of cilantro, 1 jalepeno, add 1 tbsp of olive oil and juice from one lime. Mix these ingredients together and refrigerate.
Make sheets of tin foil and create a small "boat", spray inside w/ cooking spray. The place 1 cup of spinach leaves as the bottom bed, then top w/ couscous, then top with shrimp mixture. Close within foild to create pocket and grill for 12 minutes or until boat expands.
Once shrimp is pink and cooked - pull off grill let cool. The top w/ Mango Salsa and enjoy!

Hi Teri, I love wrap ups for the grill and this sounds wonderful. I think if you use a charcoal grill it would be better to arrange coals on far sides of the grill and cook packet in middle. I presume you'd use a pound of shrimp. Thanks for this recipe, Zil
