In Response to Great Salads for parties or BBQ:
I wanted to try something new for a party last weekend and found this recipe. I love to cook but love it even more to see people enjoying something I prepared. This was a big hit!
Make the vinegrette first and let stand while chopping veggies:
1 cup of mayo, 2 tbsp of white distilled vinegar and 1/4 cup of sugar (i use truvia for less calories). Mix and let stand for a few minutes.
Cook 6 slices bacon (I cheated and use already cooked and heated in microwave), let cool and then chop and place in a big bowl with the following:
1 head of broccoli chopped
5 stalks of celery chopped
4 scallions/green onions chopped
6 strips of cooked Bacon (I used the precooked and heated in microwave - cooled then chopped up)
1 cup of toasted almond slices
1 cup of chopped green grapes
After mixing the veggies, pour the vinegrette over the veggies and refrigerate for at least hour. Then serve and watch it disappear ;)

Love salads and this one is great. With this recipe you could add additional favs, i.e., cheese cubes. Doesn't it make you feel good when you create a recipe and it goes over in a big way. Good for you.
