Quick Lunchbox Cake: 2 1/2 cps. Pillsbury AP flour; 2 tsp. Baking soda; 1 tsp, salt; 1cp. firmly packed brown sugar; 2 eggs; 1/4 cp. soft butter; 1 16oz. can of fruit cocktail undrained; 1/2 cp. semi-sweet chocolate pieces (chips); 1/2 chpd. nuts opt.
Oven 350o..13x9" cake pan
Grease & flour bottom of cake pan. Combine all ingredients except the chocolate & nuts..in a large mixing bowl. Blend well at lowest speed of mixer; for about 2 min. at med. speed; Pour batter into pan. Sprinkle with chocolate bits & nuts. Bake at 350o for 35-40 min..cool completely before removing from pan...Enjoy with your favorite beverage...Note: Bake longer about 1 hour..as the fruit cocktail liquid tends to keep this moist..I haven't made this for quite a while and I baked it for the above time and it wasn't cooked all the way through so increase the baking time....
