Zil, Yes, i do freeze a lot of soups for the winter. I got carried away with planting as usual. Some of my beets are ready to pick. So, I guess the first recipe for beets will be a roasted beet and feta cheese salad. Talking about blossoms on the squash plants. Yes they are beautiful and quite tasty battered and deep fryed.

Hi Lin ~ funny you would mention beets. Just finished last jar of pickled beets from last year. My neighbor and I plan on pickling more next weekend. Gardens didn't fare as well here in beautiful MO. With all the rain, floods, then heat and draught produce will be sparse and pricey. The salad sounds wonderful by the way and will keep that in mind when we do beets.
