Memorial Day weekend - official start to get the fresh air / nature deprived back to the land of No Light, Air or Noise pollution, Trees, Tents, Sleeping bags, Camp fires and cook stoves, 2, 4 and multi-legged critters or winged creatures and become hunter/gatherer or hiker/stumbler societies again.
That'll be me for some as I gather up 6 of my favorite friends and kin and take 'em off to the willies. They have been pre-advised upon the joy of skeeter repellers, multi-seasonal wear to bring and cover all bases of weather.
Morning lows in the 40's, followed by highs in the lower 90's. Preparing for melting or dripping wet conditions. And the just can't be forgotten comfort food - bad for the health but, excellent in moderation - are we ready for it.
1 pound of bacon
4 cloves of garlic, minced
1 sliver of onion
1-4 chipotles en adobo (depending on the level of heat you can tolerate)
2 teaspoons adobo sauce (from the can)
2 teaspoons ancho chile powder
1/2 teaspoon allspice
1/2 teaspoon ground Mexican hot chocolate
1 cup of brewed coffee
1/4 cup apple cider vinegar
Black pepper to taste
Cook the bacon until fat is rendered, but not too crisp. Cut cooked bacon into two-inch sized pieces.
On medium heat, cook the onion and garlic in one tablespoon of rendered bacon fat in a medium-sized pot for two minutes. Add the cooked bacon, spices, apple-cider vinegar and coffee. Simmer on low for two hours, stirring occasionally. If jam starts to get dry, add water, 1/4 cup at a time.
After two hours, place bacon jam into a food processor, and puree for two or three seconds, tops. You just want to bring it together but still have some chunks.
Put it in a jar, cover if you make it that long and take while camping. Great on just about anything known to gaia and wo(man). I'm feeling particularly politically correct, it happens when I actually like my guests.
And yes, there WILL be the lakeside deep thunk of what mighta happened with Kin that died in a few wars too many but, that were necessary at the time. That's about as MemorialDay-ish as I'll get here.
I still kinda wish I had my cuzzin and not a sunk destroyer named after him or newly forming reef foundation - bet his son mighta liked to have met and known his father as well. MOH or Cousin/Father.
