ingredients: 1 cauliflower about 1lb 8oz in prepared weight trimmed and cut into florets
1 tablespoon olive oil
1 onion peeled and thinly sliced
1 garlic clove peeled and finely chopped
4 oz bacon cut into 1/2 inch strips
3 tablespoons butter
3 tablespoons plain flour
16 fl oz milk
4 oz cheddar cheese finely grated
a good grating of nutmeg
2 tablespoon grated parmesan (italian hard cheese)
salt and pepper
1 cook the cauliflower in a saucepan of boiling water salted for 4-5 minutes it should still be firm, drain and place in the hot serving dish, then keep warm.
2 heat the olive oil in a frying pan over a medium heat and fry the onion, garlic and bacon for 5-6 minutes until the onion is caramelised and golden and the bacon is crisp.
3 melt the butter in a saucepan over a medium heat, stir in the flour cook for 1 minutes stirring continuously, remove from the heat and stir in the milk gradually until smooth, return to a low heat and stir until the sauce comes to the boil and thickens. simmer gently stirring constantly for about 3 minutes until the sauce is creamy and smooth, remove from the heat and stir in the cheddar cheese and nutmeg taste and season well.
4 spoon the onion and bacon over the cauliflower and pour over the hot sauce top with the parmesan (italian hard cheese) and place under a hot grill to brown, serve immediately with a tomato salad or green salad and crusty bread.
