these are perfect little party bites. i actually made loads of them and froze some for a later date and believe me they are mouthwatering.
Ingredients for about 20.
12oz potatoes cooked
4oz stilton cheese crumbled
3 hard boiled eggs peeled and chopped fine
a few drops of worcestershire sauce
a little plain flour
1 egg beaten
3-4 tablespoons fine breadcrumbs
oil for deep frying
salt and black pepper
and a dipping sauce to serve
1 mash the potatoes until quite smooth work in the crumbled stilton cheese, chopped egg and worcestershire sauce add seasoning to taste.
2 divide the potatoe and cheese mixture into 20 pieces and shape into small cork shapes no longer than an 1inch
3 coat in flour then dip into the beaten egg and coat evenly in breadcrumbs and reshape if necessary. chill in a refridgerator for about an hour then deep fry 6-8 at a time until they are golden brown all over. drain on kitchen paper transfer to a serving dish and keep warm for upto 30 mins. serve with a dipping sauce of your preference.
NOTE after freezing allow an hour or so to defrost before deep frying.
