2 lb new potatoes
sprig of fresh mint
1 tablespoon butter
salt and pepper
2 tablespoons chopped fresh mixed herbs such as parsley, chives and mint to garnish
1 wash the potatoes or just wipe thm if they are not dirty put the potatoes and mint in a covered saucepanof boiling water salted and cook covered for 15-20 minutes until tender.
2 drain the potatoes well and remove the mint. return to the saucepan with the butter allow the butter to melt and mix with the potatoes until they are well covered.
3 tip the potatoes into a serving dish season well particulary with lots of freshly ground pepper and toss over the herbs and serve at once.
