I became a vegetarian about 5 years ago. Not Vegan, I do eat dairy (small amounts ) and fish. I made this change because of digestive problems. Knowing that fresh fruits, vegetables, beans etc. would just be easier.
Being from the South, I loved my fried chicken, bacon and all those great southern tastes but have found great recipes for Southern style vegetables that taste just as good and are better for me.
It is a change I have enjoyed and will continue.
I have found it very easy and cheaper on the grocery bill for sure.

Yes, I have followed a plant based diet for many years now. My husband followed suit a couple of years ago. Neither of us take a single medication (he's 60, I am 55). We fast walk 45 minutes four times a week. I can't remember the last time either of us have had even a cold. And I love what I eat!  We will eat some cheese if we are out, and if we are in someone's home, we dont make a fuss, and just stick to the side dishes. I think it's easy, and I have great recipes if anyone is interested.

I started eating a mostly raw, plant-based, living-foods diet a little over a year ago. I'm enjoying experimenting with a lot of interesting recipes and, more importantly, have seen such positive benefits to my overall health including weight loss, lower cholesterol, no more acid reflux, no more 'mind fog', more energy. This has been such a meaningful change that it's moved me out of retirement and into pursuing a Health Coaching career, and I've also become a Total Wellness Consultant. It's been quite a journey so far, with much to look forward to in the months and years to come!

I have been eating a mostly raw, plant-based, living foods diet for a little over a year, influenced by watching a DVD called "Food Matters". Since then I've seen a number of similarly-focused videos and each one confirms my decision. My health has improved, I've lost weight, my cholesterol has dropped significantly, no more acid reflux, I'm back to exercising. And even more interesting, it's led me to a new career -- Health Coaching and Total Wellness Consultant. Both are exciting new endeavors which have moved me out of retirement and back into the business world. Fun!

Thanks for your comments, There are so many great varieties of vegetables and wonderful recipes. I enjoy them all. And funny that loriekueffer mentiones not having colds, I have not had one in 4 years! I get a little 3 day allery thing now and then but have not had a cold. Interesting.
I find some great new veggie recipes on Pintrest, if any of you are there, love to hear and follow. I'm Melody Lowry there.
Thanks again to all of you for your input.
