Stallone's Recipe Modified by M.Spitzer
The basis of this cookie recipe is found in Stallone's book "SLY MOVES".
I modified it by adding Flaxseed, Nutmeg, and Natural Peanut Butter not listed in the original recipe.
With the primary ingredients being rolled oats, whole-wheat flour, rice flour and flaxseed; these cookies are a long burning high-fiber energy snack and an alternative to "junky" cookies.
I use 2 of these cookies with a Protein Shake as my "Post Workout" Meal as soon as I leave the gym to get my Carb reloading and protein recovery going.
1 cup Whole Wheat Flour
1/2 cup Brown Rice Flour
1/4 cup Flaxseed Meal
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1 Tablespoon Cinnamon
1 Teaspoon Nutmeg
3/4 cup Dark Brown Sugar
2 cups Old Fashioned Rolled Oats
1/2 cup Olive Oil
1 Tablespoon Molasses
10 Tablespoons Water
1¼ cup Natural Peanut Butter
1) Preheat Oven to 375 degrees
2) Mix all dry ingredients well.
3) Add the wet ingredients, mix thoroughly.
4) Add the Natural Peanut Butter, mix again.
5) Place rounded tablespoon sized balls on Pam-sprayed cookie sheet and press slightly flat.
6) Bake @ 375 degrees for 9-10 minutes.
7) Should yield about 30 "coaster sized" cookies which are chewy and slightly moist.
NOTE: Oddly enough this is one cookie that tastes MUCH BETTER when cool and even the day after as opposed to hot from the oven.
