What are you having for dinner?

These are all great dinner ideas! Skipped lunch today and it's time to go grocery shopping to pick up some dinner fixings. Even though it's 100 degrees outside, I do make a "mean" pizza so I think I'll try the "Feta Cheese and Tomatoes and Spinach" this time...

Spinach Quiche
325 degree oven

10 oz spinach - 1/4 cup or so chopped onion - 4 eggs beaten - 16 oz cottage cheese - 2 cups cheddar cheese

mix and put in a deep dish pie dish (I use glass)

put in oven 45 minutes check if done - if not put in for approx 20 minutes more till eggs are set

# can add dill or any other  fresh herb if desired

I've started to mix some brown rice in with my salads. It turned out to be pretty good.

This sounds good, anything to make a salad more substantial this time of year as it gets colder outside.
