What are you having for dinner?

Lately I've been trying to be "good" and so I've been making entree salads for dinner. (It's also great not having any dishes to do afterward.) This is one of my latest concoctions. Top this with a sprinkle of olive oil, balsamic vinegar, a pinch of sea salt, and fresh ground pepper.

organic baby romaine
sliced strawberries
blueberries
avocado
blue or feta cheese
grape tomatoes
protein source (e.g. sliced steak, black beans, tuna)

This looks like it would be very tasty, Lynne. I've used strawberries in salads before but have never thought about using blueberries. I'll give it a try.

I just love blueberries so I highly recommend using them! Besides they're a good source of antioxidants.


This looks like it would be very tasty, Lynne. I've used strawberries in salads before but have never thought about using blueberries. I'll give it a try.

I really like greens, feta, orange flavored cranberries, and a vinegarette. Another new favorite is to add the pre-packaged Pico that I find in my produce isle to my Salads. It has tomatoes onion and peppers already in it.

Sounds like a delicious combination!

I really like greens, feta, orange flavored cranberries, and a vinegarette. Another new favorite is to add the pre-packaged Pico that I find in my produce isle to my Salads. It has tomatoes onion and peppers already in it.

I am making a home made pizza with Feta Cheese and Tomatoes and Spinach!  Yum!

...a watermelon salad---small chunks of watermelon,  thinlly sliced purple onion, spinach greens, and Feta cheese, with a balsamic vinegarette..  It is so refreshing and delicious!

We'll be having chicken breast and shrimp "build your own" fajitas. Kids and g-kids coming over for birthday celebrations,. Some will eat just a tortilla with cheese and others will eat only chicken or shrimp. Still others, only the veggies! As for me, I'll eat a little chicken, a little shrimp, lots of peppers and onions, plus some guacamole, black beans and rice. Good fun for a rainy Gulf coast evening.
