Mmm, Mmm, Chocolate!
Just in time for Valentine's Day, check out these great chocolate recipes from AARP the Magazine.
All-About-the-Chocolate Cake -- Adapted from The Cooking Club Cookbook, this decadent chocolate cake (pictured at right) uses no flour, but still comes in at under 250 calories a serving!
Chestnut and Chocolate Cake -- Adapted from Fast Food My Way by Jacques Pépin, this is actually a plan-ahead dessert (it needs to chill for four hours), but it can be made ahead. And if you don't care for chestnut puree, or can't find it, consider substituting hazlenut puree.
Chocolate-Dipped Candied Orange Rind -- From Chef Francois Dionot at L'Academie de Cuisine, a recipe that looks fancy, but is so simple! For an added health benefit, consider substituting dark chocolate in place of the milk chocolate.
Chocolate-Glazed Toffee Bars -- Adapted from The All New, All Purpose Joy of Cooking, these bars are great served with your favorite ice cream.
Chocolate Pancakes -- Adapted from 12 Best Foods Cookbook: Over 200 Delicious Recipes Featuring the 12 Healthiest Foods, these pancakes let you indulge for breakfast and still feel good! Garnish with strawberries or raspberries for the perfect Valentine's breakfast in bed.
French Truffles -- Nothing says Happy Valentine's like chocolate truffles, and these are so easy to make yourself!
Ginger Flan with Chocolate Whipped Cream -- Adapted from Latin-American Cooking Across the U.S.A., this is a wonderful recipe for those who like just a smidge of chocolate. And the ginger is a great addition to this traditional dessert.
Rich Chocolate Cupcakes -- Here's a fun Valentine's treat to make for (or with) the grandkids. The recipe can easily be halved if you don't have a crowd to feed. Or make the whole batch and share with friends or co-workers.
Tiramisu -- Adapted from The Palm Restaurant Cookbook, this traditional Italian dessert has been described as "heaven in your mouth." This is a wonderful finish to a special meal.
